B’s Mediterranean White Bean Salad

We are investigating and contemplating the Mediterranean diet. Maybe we’re procrastinating too, hahahaha, but anyway. The healthiness of it, especially as we age, just sounds so good for our bodies. B came up with this recipe combining a few others he’d read and as weird as T is about, well, everything – lol – she loved this and went back for seconds! And it’s so easy to make, the best kind of recipes.

B’s Mediterranean White Bean Salad

Ingredients

  • 15 oz. can of white Cannellini beans drained and rinsed

  • 2 mini cucumbers or 1/2 of a large cumber chopped

  • 1/4 cup of red onion chopped

  • 1/2 red bell pepper chopped

  • 10 oz. of grape-cherry tomatoes halved

  • 1/3 cup of Kalamata olives, pitted and chopped

  • 1 tablespoon parsley

  • 1/2 teaspoon oregano

  • 1/2 cup of crumbled feta cheese

  • 1 tablespoon olive oil

  • 1 tablespoon red wine vinegar

  • salt and pepper to taste

Directions

  • Are you ready? This is so hard! Mix everything together in a bowl. Serve immediately or chill for about an hour before serving. Enjoy!

    1. Hey Bonnie! B’s heart doctor has been recommending he do the Mediterranean diet for years and we’ve talked about it almost as long, lol, just got to do it! I hope to share a lot more of those types of things… we’re trying! But cutting out the bad stuff, as you know, is so hard. And THANK YOU for your sweet words, I’m kicking my own butt at the same time, lol, so glad to know someone is in it with me!

  2. Good mrng Tracy. Thanks for the recipe, will be trying. I am a whole food plant based girl who was not a great fan of beans but now use them in everything. Our taste buds change with what we feed them consistently. Feed them well and they will learn to appreciate it????
