We are investigating and contemplating the Mediterranean diet. Maybe we’re procrastinating too, hahahaha, but anyway. The healthiness of it, especially as we age, just sounds so good for our bodies. B came up with this recipe combining a few others he’d read and as weird as T is about, well, everything – lol – she loved this and went back for seconds! And it’s so easy to make, the best kind of recipes.
B’s Mediterranean White Bean Salad
15 oz. can of white Cannellini beans drained and rinsed
2 mini cucumbers or 1/2 of a large cumber chopped
1/4 cup of red onion chopped
1/2 red bell pepper chopped
10 oz. of grape-cherry tomatoes halved
1/3 cup of Kalamata olives, pitted and chopped
1 tablespoon parsley
1/2 teaspoon oregano
1/2 cup of crumbled feta cheese
1 tablespoon olive oil
1 tablespoon red wine vinegar
salt and pepper to taste
- Are you ready? This is so hard! Mix everything together in a bowl. Serve immediately or chill for about an hour before serving. Enjoy!
