Fiesta Corn Fritters
We know we say this often but this recipe moved into our top favorite recipes after the first bite! Corn is a favorite for us and T’s Mama used to make good ol’ corn fritters when she was growing up so she’d always loved them. And combined with the kick in flavors in this recipe, wow! It’s like this combination of sweet, a tiny bit of heat, almost a Mexican cornbread vibe… SO GOOD! And you can eat them as a meal in itself or as a kicked up fun side dish!
Fiesta Corn Fritters

16 ounce bag of frozen corn kernels (fresh corn works too, you need about 3 cups)
1/4 cup of red onion, diced
1 jalapeno pepper, minced (seeds removed)
2 large eggs
1/4 cup milk
1 cup shredded Mexican cheese blend
1 cup self rising flour
Oil for cooking
Salt to taste
1 lime
Directions
- Place your onions, corn, and jalapeno in a microwave safe bowl and combine. Microwave for 3-4 minutes, stirring halfway through. Remove from microwave and let cool slightly.
- Stir in milk, cheese, flour, salt, eggs. Combine well.
- Heat oil in a large frying pan. Use a large spoon to drop batter into the pan (like making pancakes!). Fry on both sides until that beautiful golden brown on both sides.
- Plate and squeeze a little lime over them. Garnish with sour cream and/or salsa if desired.
